Taco Chili

Here's one I don't want to forget, although I didn't take a picture. This one will be good in the fall, aka "chili season" at our house, but with the taco flavoring it has a nice summer feel to it as well.

In a large pot, dutch oven, or crock-pot, combine the following:

2 cups cooked, shredded pork or chicken
1 onion, chopped
1 can black beans, drained and rinsed
1 can light red kidney beans, drained and rinsed
1 bag frozen corn
1 can tomato sauce
1 can Rotel tomatoes
1 can diced tomatoes
Homemade taco seasoning (as follows)
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
I cooked it in the crockpot on low for 8 hours. And it was a winner! Enjoy!
